Technical Stages :
- Drain the soaked sour cherries. Don't pull off the stalks.
- Dip the cherries in the white icing but do not coat the top of the fruit (where the stalk grows). Let dry.
- Dip the sour cherries up to 1/4 from the end of the stalk in a dark chocolate that you'll have slightly melted beforehand. Drop then on a bed of chocolate vermicelli.
- Leave to cool.
- Let the cherries soak for 8 to 10 days before eating them.
- NOTE:
- With time, the white chocolate will melt under the dark chocolate and will turn liquorish.
