Candied Ginger and grapefruit Flan

For this recipe, you need :

  • 2 grapefruits
  • 300 g sugar
  • 4 eggs
  • 1 tablespoon potato starch
  • fresh ginger
  • 300 g strawberries
  • fresh mint

Technical Stages :

  • Peel a small 2 cm long piece of ginger and cut it in sticks.
  • Place these sticks in a saucepan with 20 cl water and 100 g sugar. Bring to a boil and leave the ginger to candy for 15 minutes on gentle boil.
  • Remove from heat and leave to cool.
  • Mince the strawberries and sprinkle with sugar.
  • Thinly slice the mint leaves onto the strawberries.
  • Leave to marinate.
  • Press the grapefruits and pour the juice in a saucepan.
  • Add the rest of the caster sugar and place on low heat. Do not boil!
  • Whisk the eggs along with the starch and add the warm grapefruit juice.
  • Add the sticks of ginger, some strawberries and mix well.
  • Divide the mixture in ramekins and cook in bain-marie for about 30 minutes.
  • When finished leave to cool and serve with marinated strawberries.
