Technical Stages :
- Boil the endives. When cooked. press them between your hands to drai nas much water as possible.
- Make a with the butter and flour. Pour the boiling milk on top of it and cook for a few minutes over medium heat, stirring constantly. Season with salt and pepper.
- Butter a casserole dish.
- Wrap the endives with a slice of ham each, put them side by side in the dish. Coat with bechamel sauce, sprinkle with grated cheese and a few knobs of butter.
- Broil in a warm oven at 275°C or 526°F.
- Serve hot.
