Technical Stages :
- Peel the endives, removing the outer leaves if they are are or look bad. Cut off the base.
- Halve them lengthwise, wash under cold running water and drain.
- Peel, wash and the onion.
- Melt the butter over low heat in a baking dish and the onion without letting it brown. It must be soft and translucent. Add the endives and cook them on both sides until golden.
- Season with salt and pepper to taste. Take away from heat and pour the broth. Cover with a lid or aluminium foil and bake at 180°C or 356°F for 35 minutes.
- Serve warm in the baking dish, and sprinkle with parsley.
