Ingredients for Cream with Tropical Fruits :

  • 7 egg yolks
  • 170 g sugar
  • 150 ml tropical fruit juice
  • 750 g whipping cream
  • 250 ml cold milk
  • brown sugar

Technical stages for Cream with Tropical Fruits :

  • Whisk the eggs with the sugar until pale and foamy, add the juice, whipping cream and cold milk. Leave the mixture to rest for about an hour.
  • Pour the mixture in 8 small clay bowls and bake at 100°C or 212°F for 50 to 60 minutes.
  • Let cool.
  • Sprinkle with brown sugar and caramelize with a culinary torch.
  • Decoration:
  • Slices of tropical fruits.
