Courgettes stuffed à la Mode Corse

Ingredients for Courgettes stuffed à la Mode Corse :

	1 Prepare all ingredients:
	2 Tomato sauce: Peel the tomatoes.
	3 Peel, seed and crush them using a knife.
	4 In a sauce pan, sweat the chopped onion with a little bit of olive oil.
	5 Add the crushed tomato, chopped garlic, thyme, basil, bay, a lump of sugar, salt, and pepper.
	6 Leave to cook for 15 minutes on low heat.
	7 Meanwhile, soak the sandwich loaf in a little bit of milk.
	8 Wash the courgettes. Cut the top...
	9 ...and delicately scoop out the courgettes using a teaspoon.
	10 Chop the flesh that was removed and put aside.
	11 Finely chop the parsley and mint. Finely grate the sheep's cheese.
	12 In a bowl, mix the flesh of the courgettes along with the sausage meat, chopped garlic, chopped herbs, drained bread, eggs and 2/3 of the sheep's cheese. Add salt and pepper.
	13 Stuff the courgettes with this mixture.
	14 Sprinkle with breadcrumbs...
	15 ...and replace the top.
	16 Place the tomato sauce in a baking dish. Line the courgettes in this dish and add a drizzle of olive oil on each one.
	17 Cover with aluminium foil and bake at 180°C for 30 minutes.
	18 When finished, remove the aluminium foil...
	19 ...and sprinkle the remaining cheese on the courgettes.
	20 Bake for another 15 minutes.
	21 Serve hot in a soup plate along with the tomato coulis.
