Coulis Niçois

Ingredients for Coulis Niçois :

  • olive oil
  • 100 onions
  • 10 nice tomatoes
  • flour
  • powdered tarragon
  • salt
  • pepper
  • 1 cube instant stock
  • 12 cl heavy cream
  • 1 parsley sprig
  • 1 tarragon sprig
  • 1.5 litre water or broth

Technical stages for Coulis Niçois :

  • Mince the onions. Sweat them slowly in olive oil. Sprinkle with flour and whisk while it is turning golden. Add the cut tomatoes and tarragon. Add warm water or broth and stir well. Cook for about 35 minutes. Purée. keep warm.
  • Before serving, bind with heavy cream. Add chopped parsley and tarragon. Serve warm.
