Pork Ribs with Two Purées
Technical stages for Pork Ribs with Two Purées :
- Chop the shallots, garlic and onion.
- Salt the pork ribs. Flour them and brown them on both sides in a bit of oil. Add the chopped garlic and shallots. Brown for 3 to 4 minutes.
- Cover and keep cooking for 20 minutes over very low heat.
- Boil the potatoes with their skin. When finished, drain and peel them. Purée and add milk.
- Peel the apples, cut them in 4 or 8 and cook them for 20 minutes with a glass of water. Purée. mix both purées.
- Put in service dish, woth the pork ribs on top. Coat with the cooking juices and sprinkle with chopped onion.
- Serve warm.
