Cauliflower Florets with Tomato Coulis
Technical stages for Cauliflower Florets with Tomato Coulis :
- Can be served cold or warm. You can prepare it in advance and if you want to serve it warm, warm up the cauliflower by leaving them for 2 minutes in boiling water () or on a non-stick pan with 10 g butter.
- Peel the tomatoes. Seed and mix with the lemon juice, olive oil, salt and pepper.
- Put this coulis in the fridge.
- Separate the florets of the cauliflower. Wash them under running water.
- for 2 minutes in a large pot of boiling water.
- Drain and boil one more time for 5 to 6 minutes.
- Drain.
- If you want to serve it cold, put the florets in the fridge and cover with plastic film.
- Before serving, using a pair of scissors, cut the mint leaves. Add them to the tomato puree and mix well. Season. Cover the bottom of the plates with a thick layer of cold coulis. Put the warm or cold florets on top.

- Even if you warm up the cauliflower in a pan with butter, there is very little calories and a lot of antooxydes vitamins in this recipe.
- The olive oil brings a small quantity of insaturated fatty acids. You can do the same with broccoli.
