Mushrooms à la Grecque

Ingredients for Mushrooms à la Grecque :

  • 1.2 kg white mushrooms
  • 150 g onions
  • 200 g baby onions
  • 10 cl oil
  • 10 cl white wine
  • 2 lemons
  • 1 bouquet garni
  • salt
  • peppercorns
  • coriander

Technical stages for Mushrooms à la Grecque :

  • Wash and diagonally cut the mushrooms.
  • ciseler the onions.
  • In a skillet, sweat the onions for 5 minutes in with a bit of oil. Stir frequently to prevent browning.
  • Add the mushrooms, lemon juice, white wine, some coriander seedsm peppercorn and bouquet garni. Add salt.
  • Bring to a boil and cook for about 10 minutes, stirring frequently.
  • When cooked, remove the bouquet garni.
  • Let cool and serve.
