Technical stages for Squids in ink sauce :
- Clean the fresh squids and remove delicately the small silver bags which contain the ink. Place them aside.
- In a large stewpan, the thinly onion, thinly sliced red and green peppers. Add the tomato pulp, season and cook for few minutes. Add the squid ink, mix thoroughly, blend and keep warm.
- Sauté the squids in olive oil for about 30 minutes (depends on size of the squids). Mix the squids along with the sauce and cook on very low heat for a few minutes. Adjust seasoning.
- Serve plain or with rice.
