Olive Cake

Ingredients for Olive Cake :

  • 250 g flour
  • one sachet of baking powder
  • 4 eggs
  • one glass of peanut oil
  • 1/2 glass of dry white wine
  • 180 g green olives
  • 200g cured ham
  • 160g grated Swiss cheese
  • a little bit of lemon juice

Technical stages for Olive Cake :

  • In a pan, mix the flour and the baking powder.
  • Dig a hole in the center and add the eggs.
  • Mix thoroughtly using a wooden spoon. Add the peanut oil and continue to stir.
  • Add 10 cl of dry white wine, a little bit of the lemon juice and pepper.
  • Beat using an electric beater to obtain an homogeneous consistency.
  • Wash 180 g of pitted green olives under cold water, drain them and cut them in two lenghtwise.
  • Thinly dice the cured ham. Add the olives, ham, and grated Swiss cheese to the cake mixture.
  • Mix well. Pour in a 26 cm long silicone cake mold.
  • Place in preheated oven at 200°C for about 1 hour.
  • Remove from the mold by flipping it over the serving dish and leave to cool before serving.
