Technical stages for Jar of Foie Gras :
- Prepare the foies. Soak the lobes of foie under cold running water, remove the nerves, season and them. Put them in a jar.
- You can add a dash of cognac, armagnac or other brandies.
- Seal tightly the jar. Put then in a large pot with a board at the bottom to prevent them from sticking during the sterilization phase. Cover with cold water.
- Bring to a boiling point and keep cooking for 20 to 30 minutes. Let it cool in the water.
- Keep refrigerated.
