Technical Stages :
- Peel the beets, cut them in 2-3 cm (0,79-1,18 inches) long pieces and put them in salted boiling water for 20 to 25 minutes. Drain.
- Cook slowly in butter for 5 minutes, then add the cream. Cover and cook over low heat until the cream has been reduced to half of its original volume.
- Transfer to a dish and sprinkle with chopped parsley.

- You may use fat-free cream for this recipe. White beets are rich in magnesium.
