Technical stages for Fig Fritters :
- Wash the figs under fresh water. Without separating the quarters, split them in four from the top.
- Place them in a salad bowl and sprinkle with 2 tablespoons of sugar and drizzle with the kirsh. Leave to macerate.
- In a salad bowl place the flour, salt and sugar in fountain.
- Crack the eggs in the center.
- Beat the eggs by adding the flour gradually and pouring the milk little at a time to obtain a homogeneous batter.
- Finally, add a teaspoon of oil.
- Leave to rest for 1 hour.
- Heat the frying oil to 180°C.
- Drain the figs and dip them in the batter.
- Dip the figs in small quantities in the very hot frying oil.
- Leave to brown for a few minutes by stirring occasionally so that the fritters are completely submerged.
- When finished, place them on a paper towel.
- Sprinkle with icing sugar before serving.
