Langoustines Basket

  • Pastry Dough
  • Crushed Tomatoes
  • Tarragon
  • Langoustines
  • Olive oil
  • Brandy
  • Chives

Technical stages for Langoustines Basket :

  • Prepare a shortcrust pastry. Keep refrigerated (done preferably the day before).
  • Roll out the pastry dough and ease into small boat-shaped tart pans. Bake blind.
  • Garnish with tarragon flavored crushed tomatoes. Put a half langoustine sautéed and flamed with the brandy.
  • Decoration :
  • A sprig of chives.
