Ingredients for Axoa :

  • 1 kg veal shoulder
  • 1 onion
  • 1 green pepper
  • 10 sweet green peppers
  • 1 garlic clove
  • salt
  • Espelette pepper
  • 4 tablespoon peanut oil

Technical stages for Axoa :

  • Dice the meat. Mince the onion and garlic.
  • Cut the green pepper in strips.
  • Brown over strong heat for about 15 minutes. Halfway through, lower the heat.
  • When finished, cover and cook for a few more minutes.
  • Season if needed.
  • Serve with fried potatoes.
