  • 280 g sugar
  • 240 g egg yolks
  • 200 g eggs

Technical stages for Bomb Mixture :

  • Cook the sugar at 121°C or 250°F.
  • Pour on the eggs while whisking with a hand mixer (low speed) - this might take a while.
  • When all the sugar will be incorporated, beat on high speed until fully cooled.
  • The bomb mix is ready for use.
