Technical stages for Caramelized Almonds :
- Bring the 16° syrup with the glucose to a boiling point.
- Add the sliced almonds. Make sure they are totally covered by the syrup.
- Keep for 2 hours away from the stove.
- Drain the almonds.
- Spread them on a baking sheet and broil at 180/200°C or 356/392°F until caramelized.
- Turn from time to time while broiling.
- Spread on a sheet of baking paper and let cool.
- Keep in a sealed plastic container.
