Technical stages for Cod Accras :
- De-salt the cod by soaking it in a large amount of water for 4 hours. Drain.
- Remove the skin and bones. Puree the meat with the onion, garlic, bird pepper, parsley, salt and pepper in moderate quntities.
- Pour in a large bowl. Add the flour, then the eggs one after the other and the milk or water. Blend well until the batter becomes neither too dry nor too liquid. Add water if needed.
- Take a spoonful of batter and pour it gently in boiling oil.
- Cook for 2 to 3 minutes.
- Drain the accras on paper towels and enjoy immediately.
