Alternative mayonnaisesTo heighten the flavour of salads and crudités, nothing is better than mayonnaise.
- Indian: combine a couple teaspoons of curry. Delicious with celery and seafood (mussels, whelks...).
- American: add 2 tablespoons of ketchup, 1 of cognac and a couple of tobasco drops. Perfect with crab or shrimp.
- West Indian: liven it up with lime juice and a drop of rum. Goes well with seafood and avocados.
- Provençal: whisk mayonnaise with olive oil and flavour it with pressed garlic. Perfect to accompany steamed vegetables served lukewarm.
- Dijonnaise: add a lot of hot mustard then moisten with wisked cream. Delicious with all crudités.
