White Butter or Nantais Butter

Grey or pink shallots?

  • Count 50 g of grey shallots or 80 g of pink shallots, 300 g of butter and 1 dl of white wine.


What does "to reduce" mean exactly ?

  • To make a white butter, you need to reduce the white wine until dry (total evaporation) and not down to 9/10.
  • Add 1 to 2 table spoons of cold water.
  • When you combine the butter in pieces to the sauce, it must be boiling and then kept in a bain-marie.


How must the butter be?

  • The butter to be combined must be as cold as possible and not softened.
