Choose good fruit for your jams

It is important to choose fruit with great care. When the fruit is too ripe it has not enough pectin, a natural gelling agent present in the fruit in minor quantities. If it is unripe it has enough pectin to make gel but it will be tasteless. In order to heighten the flavour of the fruit add the juice of one lemon per kilo of fruit. Also add 1/3 of a vanilla bean per kilo for a delicious flavour.
